Recipe for lettuce, carrot and tuna salad

Ingredients (4 people):

  • 300 g of mixed lettuce leaves
  • 4 carrots
  • 1 scallion
  • 160 g of tuna in oil
  • extra virgin olive oil
  • lemon juice
  • oregano
  • Salt

Preparation of the recipe Lettuce, carrot and tuna salad:

Wash the lettuce leaves, dry, chop and put them in a bowl.

Peel the carrots and grate them over a bowl. Season, sprinkle with oregano and pour a splash of lemon juice on top and mix well. Place the grated carrots on top of the lettuce leaves.

Peel the scallion, cut it in fine julienne and sprinkle the salad.
Season and water everything with a good stream of olive oil.

Crumble the tuna and spread it over the salad. It serves.

It is recommended to replace this salad with a rice or pasta salad, to improve energy intake and add cooked eggs that together with tuna ensure a correct supply of protein, iron and vitamins (it is a salad for 6 people).

For dessert a fruit and a yogurt (the recommended cheese ration is 40-60 g per person if the cheese is cured and 80-125 gr if the cheese is fresh), then the 150 gr of cheese in the recipe does not replace the Dessert dairy.
