Recipe for rice with octopus

Ingredients

  • - For 4-6 people:
  • 1 octopus (1kg).
  • 400 gr. of rice
  • 1 scallion
  • 1 green pepper
  • 1 zucchini
  • 1 tomato
  • 2 cloves of garlic
  • 1 glass of white wine
  • Water
  • olive oil
  • Salt
  • parsley

Preparation of the recipe for rice with octopus

Clean the octopus well and place it in the quick pot. Season, place the lid and cook (at 2) for 10 minutes after the steam starts to come out. Drain the octopus and chop it. Reserve the octopus.

Peel and chop the garlic cloves and brown them in a saucepan with a dash of oil. Chop the scallion and add. When the scallion takes color add the chopped pepper and zucchini. Season Peel and chop the tomato, add and let the vegetables well.

Add the rice to the saucepan and sauté. Pour the wine and let it boil. When it boils, dip with 10 cups of octopus broth while stirring the rice and let it cook for 15-18 minutes. Rectify salt. Serve the rice on a plate and accompany with the octopus pieces. Garnish with a sprig of parsley.

Advice when preparing this recipe for rice with octopus

It is advisable to reject large zucchini because they usually have too many nuggets and less tender meat.
